What Temperature To Cook A Turkey

0 comments
When it comes to what temperature to cook a turkey, there are two things you need to know.  they are the oven temperature and the inner temperature of the turkey when the cooking is done.

The U.S. government recommends the oven temperature be set at at least 352 oF and the inner temperature in the deepest part of the thigh of the whole turkey or the thickest part of the turkey breast should be at least 165 oF when the cooking is finished.

Turkey when its inner temperature reaches such a temperature is considered safe to eat. At that temperature, bacteria and foodborne pathogens in the turkey get killed.

Turkey Cooking Time

Now the turkey cooking time of a whole turkey is determined by a variety of variables including, but not limited to oven temperature and configuration, the size of the turkey, whether the bird is frozen or stuffed.

According to the United States Department of Agriculture,

A partially or completely frozen turkey requires longer cooking.
A stuffed turkey takes longer to cook than an unstuffed turkey.
The oven may heat food unevenly.
Dark roasting pans cook faster than shiny metals.
The depth and size of the pan can reduce heat circulation to all areas of the turkey.
The use of a foil tent for the entire time can slow cooking.
Use of the roasting pan's lid speeds cooking.
An oven cooking bag can accelerate cooking time.
The rack position can have an affect on even cooking and heat circulation.
A turkey or its pan may be too large for the oven, thus blocking heat circulation.

Turkey Cooking Times and Temperatures

How long to cook a turkey depends on a number variables including the size of turkey, pan size and configuration, oven temperature among other things.

Here is a turkey cooking time table for cooking an unstuffed turkey at the condition given below.

Size of turkey - Cooking time for unstuffed turkey - cooking time for stuffed turkey

4 to 6 pounds (breast) - 1 1/2 to 2 1/4 hours - Not usually applicable

6 to 8 pounds (breast) - 2 1/4 to 3 1/4 hours - 2 1/2 to 3 1/2 hours
8 to 12 pounds - 2 3/4 to 3 hours - 3 to 3 1/2 hours
12 to 14 pounds - 3 to 3 3/4 hours - 3 1/2 to 4 hours
14 to 18 pounds - 3 3/4 to 4 1/4 hours - 4 to 4 1/4 hours
18 to 20 pounds - 4 1/4 to 4 1/2 hours - 4 1/4 to 4 3/4 hours
20 to 24 pounds - 4 1/2  to 5 hours - 4 3/4  to 5 1/4  hours

How Long To Cook A Turkey

0 comments
How long you need to cook a turkey depends on a lot of different variables. We suggest always following recommended cooking techniques and using a meat thermometer to make sure that the bird reaches a temperature to destroy bacteria and prevent things like salmonella poisoning. You also want to be careful not to overcook the turkey.

Other variables also affect the roasting time of the whole bird:

- Dark roasting pans cook faster than shiny metals.
- The depth and size of the pan can reduce heat circulation to all areas of the bird.
- The use of a foil tent for the entire time can slow cooking.
- Use of the roasting pan's lid speeds cooking.
- An oven cooking bag can accelerate cooking time.
- A stuffed bird takes longer to cook.
- Oven may heat food unevenly.
- Calibration of the oven's thermostat may be inaccurate.
- The rack position can have an effect on even cooking and heat circulation.
- A turkey or its pan may be too large for the oven, thus blocking heat circulation

Butterball Turkey

0 comments
The makers of Butterball turkey, Twinkies and Wonder Bread have agreed to use less salt in some products as part of a national campaign against high blood pressure.

New York City health officials announced Tuesday that six more big food companies, including Butterball and Hostess, had joined an effort to cut salt levels in packaged foods by 25 percent over the next five years.

The city and other health departments and medical groups across the country are trying to persuade the nation's food manufacturers to voluntarily use less salt. To date, 22 have signed on to the initiative.

Also joining Tuesday were pretzel and chips maker Snyder's of Hanover, the sausage maker Premio, the tomato and bean packer Furmano's and Delhaize America, which operates 1,600 East Coast supermarkets.

Everyone needs at least some salt, but most Americans consume double the recommended daily amount. Too much salt can lead to high blood pressure, which can be deadly.

The Homeland Security Department is proposing to discontinue the color-coded terror alert system that became a symbol of the country's post-9/11 jitters and the butt of late-night talk show jokes.

The 8-year-old system, with its rainbow of five colors — from green, signifying a low threat, to red, meaning severe — became a fixture in airports, in government buildings and on newscasts. Over the past four years, millions of travelers have begun and ended their trips to the sound of airport recordings warning that the threat level is orange.

The system's demise would not be the end of terror alerts; instead, the alerts would become more descriptive and not as colorful. In the past two years, Obama administration officials have changed security protocols without changing the color of the threat, such as introducing new airport security measures after a terrorist tried to bring down a Detroit-bound jetliner last Christmas.

By scrapping the colors, President Barack Obama would abandon a system that critics long have said was too vague to be useful and that Democrats criticized as a political scare tactic. And it would represent a formal undoing of one of the George W. Bush administration's most visible legacies.

Officials confirmed the recommendation and the draft proposal was described to The Associated Press on condition of anonymity because other federal agencies are privately weighing in on the idea, and no final decision has been made.

North Korea Bombs South Korea

0 comments
North Korea has ablaze at least 200 artillery shells at a South Korean island Yeonpyeong in the Yellow Sea today, killing 2 troops and gravely injuring at least 12 servicemen, according to the reports. After that, strains between North and South Korea have boiled over, with shots being fired by both sides.

Tensions have been running soaring since prior in the year when the South charged the North of torpedoing one of its navy vessels and killing the 46 sailors on board. Just 2 days ago the North exposed the subsistence of an earlier secret uranium nuclear programme.

The South Korean military went on its uppermost state of alert, the defence ministry said and YTN statement that South Korean air force jets were knotted to the island.

Today, the government assembled a meeting the president’s war trench to settle on on a plan of action following the attack. F-16 fighter jets were rounded up and the state of military willingness was lifted to its uppermost level short of war.

A ministry spokesman told that “A North Korean artillery unit staged an illegal firing provocation at 2:34 pm (0534 GMT) and South Korean troops fired back immediately in self-defence”.

About 1,600 people live on the island, mainly fishermen drawn by the rich nearby waters, with a garrison of 1,000 South Korean sailors.

A former Playboy Club bunny who gained national notoriety after she was convicted of murder and then escaped from prison has died at the age of 52.

Laurie Bembenek, known as 'Bambi', was convicted of fatally shooting her police detective husband's ex-wife in 1982 and was sentenced to life in prison.

She maintained her innocence, and in 1990 escaped Taycheedah Correctional Institution in Fond du Lac and fled to Canada.

Supporters cheered her escape and sold T-shirts and bumper stickers with the slogan 'Run Bambi Run' and her story went on to become the TV film starring Tatum O'Neal.

Bembenek worked as a Playboy Club waitress in Lake Geneva, before becoming a police officer in Milwaukee where she married detective Fred Schultz.

She was convicted of shooting his ex-wife, Christine Schultz, after allegedly complaining about the alimony he had to pay.

New Kids On The Block

New Kids On The Block: They might have been the only nine guys who could close out a show as hectic as the American Music Awards. In a show filled with pop newcomers like Taylor Swift and Justin Bieber, New Kids on the Block and Backstreet Boys graced the stage to show they still had the right stuff.

Like any good boy-band performance, there were pyrotechnics and sweet dance moves. The pop supergroup started with a mash-up of the BSB hit "Everybody (Backstreet's Back)" and the NKOTB classic "Hangin' Tough." Soon the guys slowed it down for Backstreet's "I Want It That Way" and then kicked it old school for the New Kids' "Step by Step."

All nine guys took a dance break before they segued into "The Right Stuff," complete with the New Kids' infamous shuffle dance from the video. The spotlight once again fell on a BSB tune before they capped it off with "Larger Than Life," complete with an "NKOTBSB" chant. Confetti fell from the sky as the guys closed out the show.

Earlier in the night, all nine guys hit the AMA red carpet together. In an interview earlier this month, they teased that there was a chance they might record a track together.

"It's tough getting these guys in the studio. These young cats," New Kid Joey McIntyre explained about his tourmates, the Backstreet Boys. "Well, it's honestly, it is tough to get everybody together. Yes, we have lots of great intentions.

What did you think of the New Kids/ Backstreet performance? Share your reviews in the comments!

Betsy Drake

0 comments
Betsy Drake (born September 11, 1923) is a French-born American actress and writer. She was the third wife of actor Cary Grant.

Drake, the eldest child of two American expatriates, was born in Paris in 1923. Although her grandfather, Tracy Drake, had built the Drake Hotel in Chicago, IL, the Drakes lost their money in the 1929 stock market crash when Betsy was five years old. As a result Betsy was forced to return to the United States, on the ship SS Ile de France, with her parents, her brothers and a nanny. She grew up variously in Chicago, Illinois; Westport, Connecticut; Washington D.C, Virginia, North Carolina and New York, NY.

Betsy went to twelve different schools, both private and public, before concentrating on theatre and acting at junior college in Rock Creek Park, Washington, D.C.. She began looking for work as an actress in New York, supporting herself by working as a Conover model. She met the playwright Horton Foote who offered her a job as understudy in his play Only the Heart which enabled her to join Actor's Equity and thus became a professional actress.

Marc Forgione

Marc Forgione: Earlier this year, a pretty hilarious war of words broke out between a random New York Times financial writer and Chef Marc Forgione. Apparently Forgione was gettin’ loud on one of his employees in his kitchen. This writer, who was dining at the restaurant, had a good view of the action. He heard the commotion and decided it was OK to let himself into Forgione’s kitchen to reprimand the chef on what is and isn’t acceptable behavior…in his own restaurant! Really dude? You don’t go into the kitchen unless you’re invited. That’s like running onto the field during a baseball game. Rightfully, Forgione asked the guy to remove himself from his restaurant. Following the incident, Forgione learned in this New York Times Diner’s Journal article that the man he gave the boot to was a writer. To Forgione’s credit, he handled the whole episode well. Maybe next time he’s in the New York Times, it will be because his restaurant finally gets a review.

Even though we haven’t been to Marc Forgione’s restaurant yet, we fully back him. Under the circumstances, we would have handled this situation in the exact same way. Also, the man has good taste. Many of his picks below are all Infatuation approved restaurants, plus he rocks a sweet lookin’ mohawk. It was just announced this week that Forgione will be a contestant on Season 3 of Food Network’s “The Next Iron Chef”, which debuts in October. To keep up with all the Marc Forgione action on the internets, become a fan on Facebook and follow the restaurant on Twitter.

Ellis Hobbs: PHILADELPHIA -- Eagles cornerback Ellis Hobbs suffered a neck injury returning the opening kickoff of the second half Sunday night against the Giants but had full use of his extremities, the Eagles announced in the third quarter of the game.

The Eagles later said X-rays were negative and that Hobbs walked out of the X-ray room wearing a neck brace.

The Giants' Dave Tollefson delivered what looked to be a helmet-to-helmet hit on Hobbs as he fielded the kick and began to take it upfield. Hobbs fumbled the ball (the Eagles recovered) and fell to the ground, where he lay for several minutes as team medical personnel attended to him and awaited a stretcher.

There was no flag thrown for Tollefson's hit. There was a penalty called against the Eagles on the play for an illegal wedge block.

Kate Middleton Counselling

0 comments
Kate Middleton Counselling: Kate Middleton is receiving ‘counselling’ sessions to prepare her for royal life and help her cope with a husband who must put crown and country before his wife, sources have told the Mail.

Prince William’s fiancee is also understood to be receiving lessons in etiquette and protocol in the complex and archaic workings of the Royal Family.

As part of carefully-laid plans initiated by Prince William, she will have 'training sessions' to avoid the depression and isolation felt by Princess Diana, who felt abandoned and unloved by Charles within months of their wedding.

Once William leaves the RAF and takes up full-time royal duties, he and Kate are likely to spend a lot of time apart, and their every move will be in the public spotlight.

A royal insider who has been close to the Royal Family for more than 20 years said: ‘Kate is so nervous she is having counselling organised by the Royal Family to help her, not just in etiquette but in the coping process of William having something else much more important than his future wife. This is his country and his loyalty to it, as well as his need to help disadvantaged people across the globe.

‘Kate, as a new and vulnerable bride, is deemed to need a lot of help with that. The royals are desperate not to have another downward spiral of a marriage and they feel Kate has very vulnerable and soft spots. Apparently she was destroyed when William broke up with her (in 2007).'

William's aunt the Countess of Wessex has reportedly volunteered to be Kate’s personal mentor in the stressful run-up to the royal wedding.

The prince is said to have asked Sophie, the wife of Prince Edward, ahead of the engagement whether Kate could visit her Surrey home Bagshot Park for an informal chat.

Sophie, a 45-year-old former PR guru and firm favourite of the Queen, will help Kate to avoid some of the pitfalls she suffered, such as being caught in a newspaper sting making disparaging statements about the Royal Family.

The women both come from ‘common’, middle-class backgrounds - Sophie Rhys-Jones’s father Christopher is a retired businessman - and dated their partners for eight years before marriage.

A senior royal aide said: ‘There are all sorts of things (Catherine) wants to find out about. She’s very familiar with Prince William’s world - they have been going for a long time - but there are also areas that are something of an unknown. Catherine’s first port of call is Prince William’s household, including (private secretary) Jamie Lowther-Pinkerton, but all the staff will help out.’

A St James’s Palace spokesman said: ‘Prince William’s private office will organise a series of meetings with key individuals both before and after marriage.’

Since it may be announced today, everyone is searching for details and hints about it online. For the next several months, the nuptials of Prince William and Kate Middleton will be among the biggest stories in the world. But the one thing the royal wedding is missing is a date, and a venue — at least so far.

Whenever the big day is, Britain’s workers will be getting the day off to celebrate. Prime Minister David Cameron announced that the date will be a bank holiday — and if it is on a Saturday, workers will also have off that Friday or Monday.

Blue Moon

Blue Moon: IN MODERN times, the term “blue moon” is most often defined as the second full moon occurring within a single month. By a somewhat older definition, it’s the third full moon in a season that has a total of four full moons instead of three. Either way, it’s an out-of-the-ordinary phenomenon that occurs only once every few years.

“Blue moon” was understood in a much more literal way historically, writes folklorist Philip Hiscock in the pages of Sky & Telescope. Once upon a time, he says, it denoted a phenomenon even rarer than an extra full moon, one that has occurred perhaps only once or twice in recorded history: the face of moon literally appearing to turn blue in color.

Vince Young: The Tennessee Titans have a very favorable remaining schedule. Unfortunately, fifth-year quarterback Vince Young won’t be in position to reap the benefits.

Titans coach Jeff Fisher said following Sunday’s game that Young has lost his job as starter, following a day in which the quarterback was booed, injured, threw his shoulder pads into the stands and stormed out of LP Field. It’s a particularly curious development, considering veteran backup Kerry Collins is out indefinitely because of a calf injury, leaving only third-stringer and rookie Rusty Smith as a fallback option.

Laurie " Bambie" Bembenek died today of complications of numerous health problems last night in Portland, OR., at the age of 52.
From jsonline:Bembenek, 52, who later changed her first name to Laurie, had been admitted to a hospital in recent days and then was transferred to a hospice, her sister said. Her health problems included hepatitis C and liver and kidney failure, Colette Bembenek said.
"It went real fast. I'm glad she didn't linger," Colette Bembenek said. "I knew it was inevitable that she probably would be expiring early in life."
Laurie Bembenek was the former Milwaukee police officer charged with killing her then-husband's ex-wife, Christine Schultz. She was convicted in 1982 and sentenced to life in prison, but that was far, far from the end of the story.
In 1990, with the help of fiancé Dominic Gugliatto, the brother of another inmate, she escaped from Taycheedah Correctional Institution. They were captured three months later in Thunder Bay, Ontario. More legal proceedings resulted in her pleading guilty to second-degree murder and being released on parole for time served.

Preheat the oven to 350 degrees F. Butter a 15 by 10 by 2-inch glass baking dish.

Melt 2 tablespoons of butter in a large heavy skillet over medium heat. Add the pancetta and saute until crisp and golden, about 10 minutes. Using a slotted spoon, transfer the pancetta to a plate lined with a paper towel.

Melt the remaining butter in the same skillet over medium-high heat. Add the onions, carrots, celery, garlic, rosemary, and mushrooms. Season with salt and pepper, to taste. Saute until the onions are very tender, about 12 minutes.

In a large bowl, add the sauteed vegetables, the chestnuts, Parmesan and bread. Add enough broth to the stuffing mixture to moisten. Add the cooked pancetta and eggs. Season the stuffing, to taste, with salt and pepper and add the parsley. Stir to completely combine all the ingredients.

Transfer the stuffing to the prepared dish. Bake until the stuffing is heated through and the top is golden brown, 30 to 45 minutes. Remove from the oven and serve.

Cornbread Stuffing With Cranberries, Sausage, and Sage

0 comments
Ask anyone and they'll likely tell you that stuffing is one of their top favorite Thanksgiving side dishes.

Some families like to serve the same recipe year after year. But I prefer to surprise my guests by adding unexpected ingredients to my traditional cornbread stuffing like dried cranberries, sage, and spicy sausage. This recipe keeps things interesting around the Thanksgiving table -- all you have to worry about now is whether to cook it inside or outside the turkey.

Cornbread Stuffing With Cranberries, Sausage, and Sage

    * 2 cups pecans
    * 1 link spicy sausage
    * 3/4 cup (1 1/2 sticks) unsalted butter
    * 3 large onions, diced
    * 6 stalks celery, diced
    * 1/4 cup dried oregano
    * 1 pan cornbread
    * 1 loaf day-old white bread, crust on, cut into 1-inch cubes (10 heaping cups)
    * 3 large eggs, lightly beaten
    * 2 cups dried cranberries
    * 1 cup coarsely chopped fresh sage
    * 1 tablespoon coarse salt
    * 1 tablespoon freshly ground black pepper
    * 1/2 teaspoon cayenne pepper
    * 1 quart chicken stock

Toast pecans in oven until golden and fragrant, 8 to 12 minutes at 350 degrees, tossing occasionally. Let cool, then roughly chop; set aside.

Brown sausage in skillet; set aside.

Melt butter in a large skillet. Add onions and celery; cook over medium heat, stirring occasionally, until onions are translucent, about 10 minutes. Add oregano; stir to combine.

Transfer onion mixture to a large bowl. Add pecans, cornbread, bread cubes, eggs, cranberries, sage, salt, black pepper, cayenne, sausage, and stock. Mix to combine. Cook stuffing in buttered baking dish -- 35 minutes covered at 375; remove foil and bake additional 10-20 minutes. Or cook inside turkey.

My Favorite Stuffing Recipe: Cornbread Stuffing

0 comments
Remember a few weeks back when I was freaking out about making Thanksgiving dinner for my whole family and, more specifically, the stuffing?

Well, since then I've been trying recipes, and I think I found my favorite: Cranberry-Cornbread Stuffing (using the Skillet Cornbread I made earlier this week). It's a Martha Stewart recipe, but I've added a special, secret ingredient.

From all your comments on my earlier post (thank you!), it seemed like sausage in stuffing is the way to go. And, Mr. Cafe Kim enthusiastically agreed. So, I added a tiny bit of spicy Kielbasa to this recipe, and it was heavenly.

And now that I have the stuffing out of the way, I can concentrate on more important things—like the turkey!

Cranberry-Cornbread Stuffing by Martha Stewart

8 ounces (2 cups) pecans

3/4 cup (1 1/2 sticks) unsalted butter

3 large onions, cut into 1/4-inch dice

6 stalks celery, cut into 1/4-inch dice

1/4 cup dried oregano

Skillet cornbread

1 loaf day-old white bread, crust on, cut into 1-inch cubes (10 heaping cups)

3 large eggs, lightly beaten

2 cups dried cranberries

1 cup coarsely chopped fresh flat-leaf parsley (1 large bunch)

1 tablespoon coarse salt

1 tablespoon freshly ground black pepper

1/2 teaspoon cayenne pepper

1 quart chicken stock

Preheat the oven to 350 degrees. Spread pecans in a single layer on a rimmed baking sheet; toast in oven until golden and fragrant, 8 to 12 minutes, tossing occasionally. Let cool, then roughly chop; set aside.

Melt butter in a large skillet. Add onions and celery; cook over medium heat, stirring occasionally, until onions are translucent, about 10 minutes. Add oregano; stir to combine.

Transfer onion mixture to a large bowl. Add pecans, cornbread, bread cubes, eggs, cranberries, parsley, salt, black pepper, cayenne, Seasoning, and stock, mix to combine. Cook stuffing in a turkey or buttered baking dish (35 mintues covered at 375; removed foil and bake additional 10-20 minutes).

Sweet Potato Casserole With Marshmallows

0 comments
Sweet Potato Casserole With Marshmallows, Back when Earth Day was still in diapers, cheese fondue was considered an elegant appetizer and people thought they looked hot in bell bottoms, there were no heritage turkeys from custody or fancy-pants sweet potatoes on the table for Thanksgiving.

No, our birds are frozen from the farm nearest factory. And cranberry sauce? He slipped on a box with a schlurp who made the children laugh.

The average American, we celebrated Thanksgiving 30 to 40 years has been, for the most part, processed, convenient and cheap. And, not knowing better, we loved it.

Raindrops Keep Falling On My Head: The rain in my part of the world keeps falling….and falling….like the song, Raindrops Keep Falling On My Head, from the 1969 western movie, Butch Cassidy and The Sundance Kid, with Paul Newman as Butch Cassidy and Robert Redford, as The Sundance Kid, has anyone seen Robert Redford lately? Geez that guy has aged….but I am digressing…as usual….

The movie, for those of you too young to remember 1969, was about a couple of American bank robbers and was apparently based on a true story, although I think the facts had been stretched a bit to make a movie….for instance, I doubt very much that a cowboy bank robber would take time out of his busy schedule of robbing banks and trains to ride a bicycle with Katharine Ross while hearing a song playing mysteriously in the background…but who knows? Maybe they did…..

On Patch 2 a Grey Seal bottled among the white horses but other than that there didn’t seem to be too much about. a couple of Great Crested Grebes sat quietly on the water and while we were waiting for them to do something suddenly there was a flurry of activity.
